Drafting: A weeklong meal plan that includes lunches

I’m on a mission!

One of my goals for the rest of 2009 is to get more organized in the kitchen.  I absolutely love to cook (though not necessarily wash dishes), but, I never never make a plan for the week.   With the new full time hours, week night dinners have been very basic: protein plus roasted root vegetables at least three nights a week! Thankfully, nobody complains, but, it leaves me high and dry come morning when there is no leftovers for lunch.  This poses a problem for me, because EVERYBODY has to take a lunch daily. Ugg!  If it wasn’t for lunches, I’d do just fine on the clean eating diet for me and the whole family.

Breakfasts:

Egg Omlet Muffins

Old Fashion Oats

Eggs with spinach and mushrooms

Dinners:

Otsu with Tempeh

Shrimp with Snow Peas

Salmon and Kambocha Squash (image taken from My Recipes: here)

Risotto with Sweet Potatoes and Salmon

Big Curry Noodle Pot (101 cookbooks)

Vegetarian Chili

Chicken with ginger, lemon and cinnamon sticks (recipe this months Body and Soul)

Snacks: Nuts, Carrots, Hummus (I’m a diehard hummos fan!)

PHEW!! Five recipes- hopefully enough leftovers!  I would love to hear what everybody else is planning this week!

    I have to pack lunches for the girls and me every day and I hate it. The girls and I normally don’t bring left overs because Joe goes home for lunch and eats that.
