Who buys Blue Diamond Sweetened Vanilla Almond Milk? I do. Who buys the Unsweetened variety? How about the Chocolate Flavored Blue Diamond? We do. I really enjoy Almond Milk in my smoothies and my kids love it straight out of the box. It has a slightly nutty flavor that is non-dairy that is a great alternative for those of you who may be allergic or vegan. We just drink it cause it tastes good.
But, we recently discovered a recipe for how to make it and it is amazingly easy…
First, you should (we didn’t) soak 2 cups of raw almonds in water for several hours.
Second, place 2 cups of raw almonds in blender and cover with water. Blend until smooth. Kids aren’t fans of our cheap blender, but, it gets the job done.
Third, add seasonings…Hubby went a little overboard here as he added 1 teaspoon of vanilla extract, agave nectar AND chocolate powder…

Fourth, using cheesecloth (we used a basic clean kitchen towel) strain the mixture to a bowl and test it.

Finally, squeeze the living crap out of the contents of the mixture!

Chill and serve!
Final Verdict: Tasty, but, needs tweaking. The milk tasted very much like a rich desert and wasn’t all that popular with the boys, but, hubby and I thought it was ok.
Oh, and what should you do with the almond paste that’s leftover?
I made chocolate chip cookies with it. Simply took the paste, dumped it in mixing bowl and added all of the regular ingredients for chocolate chip cookies (minus 1 stick of butter). Most delicious cookies we’ve ever tasted! (sorry no picture, as they were all consumed immediately!!)
Hubby found this recipe via Twitter, but, as is our custom, we never truly follow recipes exactly?!! Who does anyway?
