Fit Mommy’s Food Edition

January 16th, 2009 · 4 Comments

Dad must have brought me up right, because I insist on sitting at the table for all our meals. Like everyday.  We all have breakfast together too.  It’s boring. Old fashioned oats and if I have an extra fifteen minutes, I’d make egg whites scrambled. Have yet to actually add egg whites to my oatmeal…I know a lot of you do that!!

The following are some HITS and some MISSES…

Edamame: Huge hit in this family.  In fact it is so popular that I need to make it a weekly habit.  Not sure if it’s the excitement of opening the pea pod or the fact that they taste good, but everyone LOVES them!

Purple Kale: One of my personal favorites is saute’d Kale- although I usually use green Kale.  Trim the leaves of the stem and chop in small bite size pieces, heat skillet and add olive oil and garlic and cook until fragrant.  Add the kale and using tongs, turn the leaves over until they start to wilt slightly, add 2-3 tablespoons of soy sauce, and serve!  I threw in some slivered almonds as an after thought.  This was not a hit with me.  Not sure if it was the purple kale or the soy sauce or maybe just old kale, but it didn’t taste that good!  Ideas for purple kale? would love to hear them!

My Daily Veggies:

My kids and I had the priveledge of trying My Daily Veggies recently and although I love the idea…my kids weren’t too excited about them.  I mixed it with warm water and served.  But according to the website there are far more interesting things to do with the packets- such as add them to tuna fish, meatloaf or veggie dips, all of which I will do now!  It would probably also go great as an addition to tomato juice, too!

Navel Oranges: The town I live in is an old orange grove town from the 1890′s and this time of year, I can buy oranges on any street corner for as little $2.  And I have found a new LOVE;  Pink Navel  Oranges.  Available for $1.50 a bag on various street corners throughout my town.  Makes a Florida orange taste bland by comparison.

Finally, if you are a shopper at a Whole Foods or a Natural/Organic Grocery Store, check out MamboSprouts for coupons off natural and organic products.  I just found out about this tonight and already downloaded coupons for MaraNatha Nut Butters, Kefir Yogurts and Country Choice Oatmeal on the Run.

This weekend, the recipe will include Ratatouille and Split Pea Soup.  What’s on your agenda for the weekend?

We make it a point to sit down and eat together as a family every day too – although not for breakfast. My husband usually doesn’t have time to sit down in the mornings so my Little Beauty and I eat breakfast together in the a.m. – just the two of us.
