Who is willing to “test drive” any recipe with this one orange fruit?
How many recipes do you love that call for this fruit?
Anyone been known to save the seeds of their favorite fruit, plant it and harvest it in the next summer season?
So, can you guess what it is?
Technically since it has seeds it’s a fruit! I remembered this at 2 in the morning.

My family has yet to “buy into” my love of Butternut Squash, so I have made it a point to stash it in recipes so that they don’t know they are eating it!
RECIPES TO LOVE:
Butternut Squash & Sausage Pasta: Drizzle oil in pan and cook onion until soft, then add the cubed butternut squash and cook until done. Throw the onion and butternut into a blender and add small amounts of cream or milk until you have soft, pureed squash and onion. Cook sausage in same pan, then slice. Add to cooked whole wheat pasta and vegetables. (La Cucina Italiana recipe)
Butternut Squash Risotto: I made this recipe with both sweet potato and butternut and the combination with the vanilla bean – made it rich, creamy and very filling. Note: Cube vegetables into tiny pieces so that it looks like rice if you have picky eaters!
Roasted Root Vegetables: Carrots, Parsnips, Sweet Potatoes, Butternut, Red Onion. Dice, cube, drizzle with olive oil and roast at 400- 450 for 30 minutes. They should be light brown on the edges.

Finally, if you haven’t checked out Culinary Competitor, I highly recommend it! All recipes are designed for the ATHLETE! Check out this wonderful looking soup (haven’t tried it) and I don’t know a thing about Jerusalem Artichokes but, I’d love to hear if any of you have tried this recipe.

Ok, not to nit pick or anything, but you totally threw me with the root vegetable classification. Definately not a root, but darn yummy!

Have you tried fries? Could be a miss, since they may expect real fries, but they’re fun to eat that way!

Yum… butternut squash. My husband isn’t a fan of it, but I keep trying!
I also love eggplant, brussel sprouts and broccoli. The eggplant is a newer obsession, I hadn’t even tried it until a couple years ago!

I absolutely love butternut. My husband fears that one day I will wake up a butternut because I eat so much of it. Oh you can also make butternut smoothies.. Just butternut and milk, it’s delicious and you will be full all day!

Mmm, butternut squash is right up there on my favorite list.
If I had to pick a favorite, I’d have to say asparagus (for taste), but sweet potato for nutrition.
I toss fresh asparagus with olive oil, kosher salt, fresh ground pepper, a splash of lemon, throw it on the grill, and boy, I’m in heaven. Love it. If I’m not in the mood to grill, I’ll roast it in the oven, still delicious!

I love butternut squash. If you’re in a hurry, it’s even good just cooked in the microwave.
As for butternut squash fries, just slice into fry shape, toss with a little olive oil and salt/pepper to taste, bake in a 350 deg. oven until brown. Yum!
