For the love of eggplant

Husband used to call me a farmer.  Not a vegetable gardener, but a farmer.  I never do things in a small way, if I do it, I’m going to clear LARGE areas of the backyard and throw some vegetables out there.  And Get real excited when I get a pepper! However, my garden is only really good for a few kinds of vegetables: eggplant, peppers, pumpkins and whatever random vegetable that grew out of the compost pile.  This year, I got cherry tomatoes involuntarily and was happy to keep them.  I have NEVER successfully grown tomatoes EVER.  For the past month, I’ve been pulling 2-3 eggplants of the plant every week.  I truly believe eggplant is something you need to “coach” to taste good!  You can’t eat it like an apple and I never eat it steamed.  It’s great in pastas, side dishes on crostini, or grilled with balsamic.

The best way I’ve found to cook an eggplant is VERY simple but VERY tasty.

Cut eggplant in 1/4 slices.

Dredge in flour and salt (I use whole wheat)

Fry in Olive Oil.

Eat.

    I’m not a big fan of eggplant overall – especially the larger varieties – they taste kind of acrid to me.

    However, I do like the smaller varieties prepared like you’ve suggested – they’re also pretty good marinated and grilled.
